Grain & Copper started with a simple frustration: the kind of bar we wanted to spend our evenings in didn't exist in our neighborhood. So we decided to build it.

The Founders

Travis & Stephanie Starkey

Husband and wife, co‑owners, and the team behind Grain & Copper. Together, we’re building an upscale, whiskey‑focused neighborhood bar designed to offer a refined yet comfortable place for adults to unwind, connect, and feel valued. Grain & Copper is more than a business to us; it’s a vision shaped by our love for craftsmanship, hospitality, and community. We want to create a space that feels familiar but elevated, where every guest feels welcome and appreciated. We’re currently in the early stages of bringing this concept to life, and we’re excited to share the journey as we build something special.

What We Believe

Three things that guide every decision.

Whiskey is for everyone.

We have a $13 pour and a $145 pour and they're both on the same menu without judgment. Your comfort level with whiskey doesn't determine your welcome here. We'll meet you wherever you are.

Texas goes first.

We have 37 Texas whiskeys at opening. Houston is home to the state's first legal whiskey distillery. We think that deserves to be celebrated. You'll find us at Garrison Brothers and Balcones before we go anywhere else for a barrel pick.

Slow is the point.

We're not optimizing for table turns. The room is designed to make you stay. The lighting, the seating, the music level, the pace of service — all of it is calibrated so that an hour feels like you intended to spend it, not like it disappeared.

Targeting SBA 7(a) approval and Bridgeland Central lease execution. Preferred lender conversations underway.

Build-Out Begins
2,700 sq ft warm shell space at Bridgeland Central. Bar construction, private tasting room, prep kitchen.

Grand Opening
Friends & family soft open, community preview, then grand opening for Bridgeland and beyond.
